Caramel Apples
INGREDIENTS
• 6 apples
• 2 cups / 4 3/4 dl white sugar
• 1 cup / 2 1/3 dl packed brown sugar
• 1 cup / 2 1/3 dl corn syrup
• 1 cup / 2 1/3 dl evaporated milk
• 1 pint / 4 3/4 dl heavy whipping cream
• 1 cup / 225g butter
• 1 1/4 teaspoons vanilla extract
DIRECTIONS
1. Remove the stem from each apple and press a craft stick into the top. Butter a baking sheet.
2. In a medium-size pot, combine sugar, brown sugar, corn syrup, evaporated milk, whipping cream, and butter. Monitor the heat of the mixture with a candy thermometer while stirring. When the thermometer reaches 250 degrees F (120 degrees C) remove the pot from the heat. Stir in vanilla.
3. Roll each apple quickly in caramel sauce until well coated. Place on prepared sheet to set.

• 2 cups / 4 3/4 dl white sugar
• 1 cup 2 1/3 light corn syrup
• 1 1/2 cups / 3 ½ dl water
• 8 drops red food coloring
DIRECTIONS
1. Lightly grease cookie sheets. Insert craft sticks into whole, stemmed apples.
2. In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring.
3. Holding apple by its stick, dip in syrup and remove and turn to coat evenly. Place on prepared sheets to harden.
